Yorkshire Wensleydale & Cranberries Cheese and Apple Pancake

Ingredients

4 pancakes
120g Yorkshire Wensleydale & Cranberries cheese, crumbled
4 apples, peeled, cored & chopped
Sugar to taste

Method

  1. In a medium pan, add the apples with a dash of water
  2. Cook on a medium heat, stirring regularly until the apple breaks down and becomes fluffy
  3. Add sugar to taste
  4. In the centre of a pancake, place a quarter of the cheese
  5. Top with a quarter of the apple, then roll up
  6. Repeat for the remaining three pancakes, and enjoy!
