Yorkshire Wensleydale is our iconic, creamy, crumbly classic, and is protected with European Protected Geographical Indication (PGI) status. It is the only Yorkshire Wensleydale cheese that is actually made in the defined geographical location of Wensleydale.

A lovingly handcrafted old-style Wensleydale cheese with a buttery, and especially creamy texture, emulating a cheese recipe used by farmers’ wives in their farmhouses & dairies around the turn of the century & throughout Kit Calvert’s era.
Named in celebration and honour of Kit Calvert MBE, the legendary Yorkshire businessman, who helped save the Wensleydale Creamery from closure in the 1930s. The cheese is handcrafted using local milk and our unique cheese-making starter cultures and bound in cloth, before being naturally aged and matured for around 16 weeks on open shelves in an atmospherically controlled cheese store, under the watchful eye of our specialist Cheese Grader.
During this maturation period the outer surface of the cheese forms a natural rind, whilst the buttery, creamy, complex rounded flavour and texture of the cheese continues to develop. The earthy notes of the rind of the finished cheese lead you through to the creamy, buttery body of the cheese with a complex milky flavour with citrusy notes and a lemony back flavour.
A true delicacy; inside the natural rind of the cheese, a close textured, creamy blue cheese with a delicate mellow, yet full flavour, which is notably not strong or harsh is revealed.
Steeped in heritage & provenance, Wensleydale Blue represents the original Wensleydale cheese that was made by the Cistercian monks when they first settled in the Dale in 1150. Due to the conditions under which it was made and stored, the cheese would have naturally ‘blued’.
We handcraft our award-winning Wensleydale Blue to a traditional recipe using milk from local farms, and our own cheese-making starter cultures, to guarantee is quality & authenticity.
We naturally smoke cheese over oak chips in our on-site smoke-house. The rind of the cheese adopts a golden beech colour, whilst the natural smoke flavour permeates the body of the cheese.
Named after an iconic Yorkshire landmark, Fountains Abbey, our popular Fountains Gold Cheddar is handcrafted and carefully matured at our Creamery using milk from local farms and our unique cheese-making starter cultures.
It’s rich, mellow and buttery in flavour, with a golden appearance and a smooth, creamy texture.
We use this fantastic cheese to blend with the ingredients such as Black Sheep Ale and caramelised onions.
