Digital Days Out Thursday 16th April: Cheese-making Step 10 - Pressing

Pressing shapes the cheese and expels any remaining whey. the filled cheese moulds are lifted onto a press and pressure is applied. Yorkshire Wensleydale cheese is only lightly pressed. the pressing operation takes 24-72 hours depending on size of the cheese! It is important to maintain the cheese at a constant temperature throughout pressing to ensure that the best possible flavours are developed in the finished cheese.
