Wensleydale with Cranberries Cheesecake

Ingredients

4oz       Wensleydale Cheese with Cranberries
4drops Vanilla essence
4oz       Cream cheese
1oz       Castor sugar
1pt       Whipped cream
8 Digestive biscuits
1oz       Unsalted butter

Method

Crumble digestives
Melt butter
Mix crumbled digestives into melted butter
Place digestive & butter mixture into four separate or one 2” high dish(es).
Pat mixture into dish(es) and then place in refrigerator for approx. 30 minutes
Whip the cream with the sugar and vanilla essence.
Grate the Wensleydale Cheese with Cranberries.
Fold into the whipped cream, the grated Wensleydale Cheese with Cranberries & the cream cheese
Place mixture on top of the digestive biscuit base & put back into refrigerator for a further 30 mins.
Serve garnished with a sprig of fresh cranberries
