Real Yorkshire Mature Wensleydale

Real Yorkshire Wensleydale Cheese selected for maturing is placed on shelves in the atmospherically controlled maturing room. Here it remains for up to six months. Each batch of cheese is turned regularly to ensure correct rind formation. After a few weeks the entire cheese is covered with a coat of mould. Real Yorkshire Matured Wensleydale takes on the appearance of a truly traditionally ripened cheese. During this period of maturation, a host of changes take place within the cheese. Real Yorkshire Matured Wensleydale loses moisture, to produce a drier cheese than its younger counterpart. The Dales milky flavour is retained, yet is complemented by a classic "mature cheese" flavour
