Wensleydale, the most famous of all the
Yorkshire Dales, deserves a special cheese. To this end Real Yorkshire
Extra Mature Wensleydale is the answer from the Wensleydale Creamery,
Hawes, in Wensleydale.
The large, cylindrical 40lb cloth bound cheese, are ripened for longer
than the younger members of the Wensleydale family, for a minimum of
nine months, to give a fuller deeper flavour. Thus completing the Wensleydale
family, with Wensleydale at an age profile of six months, and Traditional
Wensleydale being only four to eight weeks old.
Discerning customers will appreciate the deep flavour, notably not acidic, produced by the development of the Creamery's own starter cultures, over the nine months of ripening. Notably, Real Yorkshire Extra Mature Wensleydale retains its crumbly, moist nature, typical of Traditional Wensleydale Cheese.
Real Yorkshire Extra Mature Wensleydale is the perfect accompaniment for fruit cake, Christmas cake or apple pie, as well as being ideal for the cheese board, and excellent with a fine ruby port.
